PaniPuriLast week i made panipuri which is rarely available here. So i thought of preparing it at my home. For the first time i prepared panipuri at my home and the output is amazing. This pani puri reminded my college days, we used to eat street side panipuri. I got exact flavor at my home. And my husband really enjoyed it and i received many compliments from my hubby. Just go for a trial and receive compliments from your family members too…
Here I am giving the pani, puri, stuffing recipes with basic preparation method in my own style, with common ingredients. Depending on your spiciness you can adjust the ingredients and create your own method of preparation.

Puri:
Ingredients:
sooji/ Wheat rawa- 1 Cup
All purpose flour- 1/2 cup
salt- 1/4 tablespoon
Oil- for deep fry

Method:
Mix all the above ingredients well and knead a soft dough.
Cover it with wet cloth for 20-30 minutes
Make balls and roll it like chapathi.
And then cut them into small rounds with the top of a glass.
Heat oil and deep fry puris till light golden brown color. Put them in oil absorbent paper.
Now Puris are ready.
After cooling you can store them in an airtight container and use it later.

Pani:
Ingredients:
Tamarind pulp- 1/2 cup (adjust as per your taste/ or as per tangyness of your tamarind)
mint/ Pudina leaves 1/2 cup
Coriander leaves 1/4 cup
Black pepper 7-10 seeds (adjust as per your spiciness)
sugar-1/4 teaspoon (adjust as per your taste)
salt-1/2 teaspoon
Green chilly 1
cumin seeds-1/4 teaspoon
Finely chapped onion as per requirement
Water- as required

Method:
Make a fine  paste of all the above ingredients except onion without adding water.
Take this paste into a bowl and sufficient water (preferably cool water) and mix well.
Then strain this pani using strainer/ Tea filter into another bowl.Taste it and if anything less, then add it.To this pani add chopped onions, 1 tablespoon of chopped coriander before serving. Now your pani is ready to serve.

Pani Puri stuffing:
ingredients:
Potato-1
Green peas-4 tablespoons
garam masala- Big pinch
chilli powder-1/4 teaspoon
salt- as required
coriander powder 1/4 tablespoon
chooped coriander 1 tablespoon
Finely chopped Onion- 1 (small) (optional)
Cumin seeds-1/4 teaspoon
Turmeric powder Big pinch
GingerGarlic PAste-1/4 teaspoon
Chat masala- 1/4 teaspoon
oil-2 tablespoons

Method:
Boil potato and green peas together till soft. Then separate them.Remove potato peel, smash it and keep it aside.
Now heat oil in a pan, add cumin seeds and let them splutter. Then add chopped onions , add little bit of salt so that onions turn brown quickly. Then add ginger garlic paste, turmeric, stir with spatula for 20 seconds. Now add green peas, smashed potato and stir well. Add 1/4 cup of water so that potato will not stick to the pan. cover it with lid for 5 minute. Now add chilli powder, salt, coriander powder, Chat masala mix well and cover it with lid for 5-7 min or till all the spices are absorbed by Potato and green peas, if required add little bit water. Stir in between. Now add pinch of garam masala mix well and switch of the stove. Garnish with coriander and serve hot with pani puri.

Tip:
As soon as you place the puri in hot oil, press the puri in oil with back of the spatula slowly then it will rise more.
